Winemaking Note
The fruit is hand-picked, chilled and whole-cluster pressed to retain freshness and cultivate texture and structure. The juice undergoes primary fermentation in stainless steel and is then aged on it’s lees in stainless steel for 5 months.
The wine is then bottled under crown-seal and undergoes a second alcoholic fermentation in bottle, after which it is left on lees in bottle for an additional 36 months, providing a perfect balance of freshness and complexity, until disgorgement.
Vintage Conditions
Steady winter rains between May and September 2021 filled soil profiles enough to sustain through the drier months. Budburst and shoot growth were surprisingly even in spring, albeit a little behind average dates, with wet and cloudy conditions continuing through to late November. The growing season lagged 3 weeks later than average, with veraison of chardonnay completing around mid-January. Dry, clear conditions and no rainfall over December and January sped up ripening, with early picking varieties maturing only a week later than historical average dates. The 2022 vintage resulted in whites of purity and power.
Aroma
Aromas of white pear, brioche and lightly toasted muesli, dotted with hints of jasmine and lemon zest.
Palate
Rich flavours of freshly baked brioche and citrus blossoms bristle atop a maelstrom of natural acidity, green plums and a delicate mousse. Fine tendrils of white fruit tannin and drive deliver a mineral finish or wet slate and mother of pearl.
Cellaring
Up to 4 years, however we enjoy it for freshness now.
