Winemaking

The Pinot Noir fruit is hand-picked, chilled overnight and whole cluster pressed to extract only the slightest amount colour and only the purest fragrances and textures from the skins. The juice is cold settled prior to fermentation at low temperatures in barrel. Our aim is to preserve freshness and capture aromatics, while developing texture and complexity in oak. When fermentation was complete, the wine was then racked off of its lees to stainless steel before bottling in July of the vintage.

Aroma

Red apple skin, raspberries and musk-stick

Palate

A refreshing entry of red currants, spiced baked apples and potpourri, delivered upon textures of raspberry pit and glazed cherries. Mineral and quenching on the finish

Cellaring

Enjoyed for its freshness now, or cellar for up to 2 years for added complexity.
